4 Ingredient Individual Chicken Pot Pies

HOLY COW!!! Did you read the post title???  Only 4 ingredients!  This is super easy and so delicious!

2 lg. chicken breasts
2 cups mixed veggies (thawed)
1 can of cream of chicken soup
1 container Grands biscuits (I use original)

375 degrees for 20-22 minutes


Make sure the chicken is thawed and cut into small pieces.  After it is cut add it to a preheated skillet with some olive oil and cook until done.
 
 


While the chicken is cooking put the mixed veggies and cream of chicken soup in a mixing bowl.  Once the chicken is done add it to the other two ingredients.


Mix well.  Spray 8 holes in a muffin tin.


This is the only part that is a little bit tricky.  Take one of the biscuits and pull and stretch it until it's flat and larger than one of the muffin holes. Lay the stretched biscuit across a hole and fill with mixture. I use a 1/4 or 1/3 measuring cup to put mixture on the biscuit.  Then I press the mixture down to start forming a cup.  After you get the mixture placed on a biscuit fold the sides up around the mixture and pinch at the top to seal it together.  This part can be a little hard but keep pinching and squeezing the dough together.


I randomly put my 8 pot pies around the muffin tin.  Keep in mind I am cooking for a family of 4.  You may want to double the recipe if you have more mouths to feed.

They are very easy to remove from the pan (as long as you spray it first)  If you have leftovers let them completely cool and put them in the freezer in a ziploc bag.  To heat from the freezer all it takes is 90 seconds in the microwave.

Look how yummy!  I threw together a salad of romaine, cucumbers, tomatoes and blue cheese with a side of applesauce.  Simply Delicious
