If it's good enough for the President

So I found this recipe for macaroni and cheese in a magazine a couple of years ago that it was favored by the President.  We love mac n' cheese so I thought I would give it a shot.  Oh my word! It's the best homemade mac n' cheese I've ever tried!

Four Cheese with Bacon:

1 pound elbow noodles
6 slices bacon
1 tablespoon butter
3 tablespoons flour
2 cups 2% milk
1/2 teaspoon onion flakes
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese
1 cup shredded colby-Jack cheese
1 cup shredded mozzarella cheese
8 slices Kraft Deli Deluxe American cheese

350 degrees for 20 minutes and then turn the temperature to broil and broil for 3 minutes.


Cook the pasta according to the package.  And in a skillet cook 6 slices of bacon.
***side note:  With the exception of tonight I always cook my bacon in the oven.  Use tin foil on a cookie sheet, line bacon on foil and cook at 350 degrees. There's not a set time just check it while it cooks and flip it over a couple of times while it cooks.  This saves any grease splatter mess to clean up.***


When bacon is done keep 2 tablespoons of the drippings and add to a pot. Add butter. After butter is melted whisk in the flour.
 
Slowly whisk in the milk.  Stir in onion flakes, salt and pepper.  Bring to a boil over medium-high heat, then reduce heat and simmer 2 minutes.


In a large bowl, toss together cheddar, colby-Jack and mozzarella and set aside.  After the milk has simmered remove from heat: whisk in the 8 slices of Kraft American cheese and 1 1/4 cups of the shredded cheese mixture.  Stir this until all cheese is melted, making a cheese sauce.  Add drained noodles to this and stir.

Tear up bacon and mix together with the remaining shredded cheese.  Spray a 3-quart baking dish and put in half of the macaroni noodles.
 

After the first layer of noodles top with half of the cheese and bacon mixture.
 

Repeat the process of layering and then put in preheated oven at 350 degrees for 20 minutes or until cheese is melted all the way through.  Then increase temperature to broil and broil for 3 minutes.
 

After it's done there are a couple of variations that I like; top it with blue cheese (pictured) and/or fresh tomatoes. Simply Delicious
