Quick and Easy Orange Chicken/Fried Rice

Tonight I wanted something quick and easy since it's a night that we are dealing with kid sports.  As a product review I will say the orange chicken found in the frozen section at Costco is delicious!  It comes with two separate portion bags and sauce packets. So definitely quick and convenient.


Fried Rice:

4 cups water
2 cups rice
2/3 cups carrots, chopped
1/2 cups frozen peas
2 eggs
soy sauce

substitute a brown rice for a healthier choice


I used white rice but of course this is where you can substitute a different rice.  If you are using white rice combine the 4 cups of water and 2 cups of rice in a pot and bring to a boil.  Then turn it down, cover and simmer for 30 minutes. If you are using a different type of rice cook according to the package.  While rice is cooking prepare the carrots.  I cut them to be about the same size as the peas.

About halfway through the cooking time of the rice, coat a cookie sheet with cooking spray and put a bag of the orange chicken in a single layer.  Place in preheated oven for about 18 minutes. The sauce pack that comes with the chicken is thawed under running water and then emptied in a small saucepan and heated for 2 minutes on medium heat.

Use a saucepan and cover carrots with water and boil for 3-5 minutes.  When carrots are done add the frozen peas and then drain the water.  The peas will be soft enough.

Heat 2 tablespoons of oil in a wok, or large skillet, on high heat.  When hot, add the peas and carrots and heat for 30 seconds.


Add the two eggs and stir quickly to scramble them.


After the eggs are scrambled and mixed in with the carrots and peas add the cooked rice and mix up and coat with soy sauce.  How much soy sauce is to your liking.
